Sunday Stack: Pink Dragon Fruit Pancakes Recipe

For a breakfast hit with the kids, you can't go past the super-colourful Dragon Fruit Pancake Stack.

The pink dragon fruit powder is a great food colouring which comes from its bright magenta-coloured flesh, but it is also packed with essential vitamins and minerals. It's high in fibre, vitamin C, rich in antioxidants, omega 3, omega 6 and essential fatty acids.


It's properties have been known to improve eyesight, boost immunity, relieve cough/asthma, improve detoxification and lower cholesterol.

Ingredients


  • Pink Dragon Fruit Powder

  • Traditional Pancake Mix

  • Coconut Oil (or butter)

  • Strawberries

  • Raspberries

  • Pomegranate

  • Maple Syrup


Method


  1. Add two teaspoons of Pink Dragon Fruit Powder to your favourite pancake mixture (pre-mix or scratch bake) and mix in thoroughly.

  2. Heat the pan, add coconut oil to line the pan (or butter to melt) and cook the pancake mixture, keeping the pancakes to a similar size for the stack.

  3. Set aside cooked pancakes on a plate and continue cooking the batch.

  4. When all cooked, arrange the pancakes in a stack. Arrange the strawberries, raspberries and pomegranate on the top and around the plate.

  5. Top with maple syrup - drizzle over the pancakes and plate.

  6. Enjoy!
